I am so excited to share this Chicken Lime Quinoa Soup recipe with you today! When I came across this recipe from Cooking Classy, it immediately caught my eye. I made a few changes to make it meet the diet I follow and added in a couple things I knew I would love.
Every Sunday or Monday I make a dish in the crockpot, typically a soup, and I eat it through out the entire week. I take it to work for lunch and will have it for dinner. If I get sick of it, I put a portion size amount in a ziplock bag and freeze it! Then when I am in need of a lunch idea a few weeks later, I place the frozen soup in a bowl (with the soup in the ziplock). I sit it in the fridge overnight and let it thaw. The next day or night I put it on the stove and bon appetite!

3 boneless chicken breasts
1 Tbsp olive oil
2 jalapeños, seeded and minced
2 cloves garlic, minced
4, 14.5 oz cans low-sodium chicken broth (depending on how much I have at home, sometimes I use half broth and half water. This has never altered the flavor for me)
2 roma tomatoes, diced
1/2 Tsp ground cumin
1/3 cup chopped cilantro
3 Tbsp lime juice
2 cups uncooked quinoa
Once you have prepared all of your ingredients, toss them into the crockpot for 4-5 hours on high heat. When your soup is done cooking, use 2 forks to shred the chicken. Add desired amount of avocado or guacamole on-top and you are ready to eat!
