One of my favorite things to drink is a smoothie! Yes, I am the girl who drinks smoothies in the mid of winter.
I must admit though… sometimes drinking a smoothie makes me feel like I skipped a meal. There is nothing more sad to me than missing a meal so I avoid this at all costs. My family all makes fun of me because if we are on vacation I always ask, “what are we going to do for lunch?” before breakfast is even over.
Luckily, there is a solution to our smoothie drinking problem, a smoothie bowl! I randomly whipped this up one day when I wanted to make an acai bowl and then discovered I had no acai. This smoothie bowl was just as filling as a normal lunch and I didn’t feel like I was missing out during the middle of the day. You can find the recipe below and I also linked some kitchen favorites I have my eye on. No better way to pep up your Tuesday than a new little marble something right?
Ingredients:
In the smoothie
Handful of kale
Handful of spinach
Handful of blueberries
Handful of blackberries
1/2 cup of quinoa milk, could also use coconut milk or coconut water
1/8 cup chia seeds
Pinch of ginger
Toppings
1/4 cup chia seed
Half of a banana
1/4 coconut flakes
1/4 cup blackberries
Steps:
Get all of the above ingredients and blend them in a blender. Next, pour the smoothie into a bowl, add toppings, and you are done!
